Homemade McGriddle Muffins

If you love the sweet and savory combo of a McGriddle, you’re going to love these Homemade McGriddle Muffins! They have all the flavors of your favorite breakfast sandwich—fluffy pancakes, savory sausage, melty cheese, and eggs—baked into a convenient grab-and-go muffin. Plus, a drizzle of maple syrup takes them to the next level!

Ingredients

1 cup all-purpose flour

1/2 teaspoon baking soda

1 cup milk (or buttermilk for extra fluffiness)

1 tablespoon white vinegar or lemon juice

1 egg

2 tablespoons sugar

1/4 teaspoon salt

2 tablespoons melted butter or oil

1/2 teaspoon vanilla extract (optional)

2 tablespoons maple syrup

Prep Time: 15 minutes

Cook Time: 20 minutes

Yield: 12-18 muffins

For the Filling:

1 lb Italian sausage, cooked and crumbled

1 cup mild cheddar cheese, shredded

4 eggs, scrambled

For Serving:

Additional maple syrup for drizzling or dipping

Instructions:

Step 1: Preheat & Prepare

  • Preheat your oven to 350°F (175°C) and grease a muffin tin with butter or non-stick spray.

Step 2: Make the Pancake Batter

  • In a small bowl, combine the milk and vinegar or lemon juice and let sit for 5 minutes (this makes a quick buttermilk substitute).

  • In a separate large bowl, whisk together the flour, baking soda, sugar, and salt.

  • Add the egg, melted butter, vanilla extract (if using), and buttermilk mixture. Stir until just combined—be careful not to overmix!

  • Gently fold in the maple syrup for that signature McGriddle flavor.

Step 3: Assemble the Muffins

  • Spoon about 1 tablespoon of pancake batter into the bottom of each muffin cup.

  • Add a layer of crumbled Italian sausage, scrambled eggs, and shredded cheese.

  • Top with another tablespoon of pancake batter to cover the fillings.

Step 4: Bake

  • Bake in the preheated oven for 12–15 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Step 5: Serve & Enjoy!

  • Let the muffins cool for a couple of minutes before removing them from the tin. Serve warm with extra maple syrup on the side for dipping.
